I could REALLY go some Mexican right now.. but salt-wise I have to avoid meals like this until the BP is better under control. I guess I could do a low-salt version and WW sourcream is my "God send". My girl especially loves nacho's and taco's.

this is my usual nachos effort. 4 bean mix, chilli powder, tomato paste, beef mince, light cheese and chopped fresh tomato.
The nachos look realllly good.
